Woodfield Menu Plan

This week I am super excited for all of the recipes that I have planned.... Man, that is a change. I usually hate thinking up recipes... thanks pinterest!

Monday- Crystal's Stromboli recipe
Tuesday- Corn and Cheese Chowder
Wednesday- Breakfast burritos (with leftover ham and bacon)
Thursday- Teriyaki Chicken with broccoli and rice
Friday- Homemade Crunchwrap Supreme

Quick lunch

I am usually so frustrated with my lunch options that I just eat junk food or go without. But today I was super hungry today. So we had canned chicken, tossed in a little bit of mayo with avocado and celery on whole wheat bread. It was so good! Then I smashed up the rest of the avocado and mixed it with salsa... (our favorite is Jack's from Costco) and had it with chips. Yum! It really hit the spot.

Thank you Paige for putting this blog together.  I'm excited to try out some of these great recipes.  I'm working on meal planning this year and here's a look at our week.  I'll let you know how we like the new recipes.

Tuesday -Chicken Cordon Bleu crockpot  (new recipe) rolls and steamed veggies
Wednesday-Beef and Bean Burritos
Thursday Stromboli (new recipe) garlic bread and salad
Friday-Carne Asada tacos

Chicken Lo Mein

Just saw this on facebook and I am totally going to be making it this week! Yum!


One Pot Wonder Chicken Lo Mein 

Ingredients: 
• 1/2 lb chicken breast, cut into small chunks
• 12oz whole wheat linguini or fettuccine, broken in half
• 4 medium carrots, peeled and cut in thin 3 inch long strips
• 1 medium red bell pepper, cut in thin 3 inch long strips
• 1 bunch green onions, white part sliced and green part cut in 3 inch long strips
• 4 cloves garlic, minced
• 1/4 C soy sauce
• 1 tsp garlic powder
• 1 tsp corn starch
• 1 tbsp sugar
• 1/2 tsp red pepper flakes
• 4 C chicken or vegetable broth
• 1/2 C water
• 2 tsp extra virgin olive oil

Directions:
Add the chicken, then the pasta, then the remaining ingredients to a large stockpot and cover. Bring to a boil. Stir and reduce to a simmer. Cook covered for about 15 minutes, stirring occasionally. Cook until most of the liquid is gone and the chicken is cooked through.




**************** After making this.... We did like it. But it needed more sauce or something. More flavor. Also, it cooked  just a little too long, but it was good. So easy that I will definitely be making it again and just trying some new things!

       Well, this past week I have been a major slacker with my meal planning and grocery shopping. Does anybody else dread grocery shopping? I HATE it. I am lucky if Hayes makes it 20 minutes before he starts throwing his tantrum so it always stresses me out. But, this next week and a half we will be staying at my sisters house to watch her four kids. So we will have a lots of mouths to feed and I will have to do some cooking. I haven't quite planned it out exactly yet, but I am thinking I will make a yummy cream of chicken soup, french dips, chicken roll ups, fajitas, and Mary's poppy seed chicken. Just off the top of my head. I will share recipes as soon as I get a second!


       How do you all do your grocery shopping and find the best deals? Coupons? Price matches? I need to be better at watching sales and saving us some money....

Fitzgerald's weekly meal plan :-)

Monday- homemade pizza
Tuesday- ham fried rice
Wednesday- crockpot shredded chicken tacos
Thursday- spaghetti (homemade sauce)
Friday- chicken/rice/broccoli casserole (I'm sure there is a better name for this)
Saturday- Paige's quiche :-)
Sunday- marinated steaks/grilled veggies

Hey everyone :-). I'm Paige's cousin Kimber and I'm so excited for this blog!! I hate coming up with meal plans and the worst question is "what's for dinner?!" I'm excited to find new recipes here and to share some of our favorites! I was going to steal all the recipes from the first week- bc they all sounded DELISH!!- but I thought that would defeat the whole purpose of this blog. I'll steal one a week until we get more recipes on here :-). Anyway- look forward to seeing more meal plans and delicious recipes.

I'll post recipes along with pics as I make them each night.

Poppy Seed Chicken

Poppy Seed Chicken

Ingredients:
2 cans cream of chicken soup
1 C. sour cream
4-5 chicken breasts, cooked and diced
1 1/2 pkgs. Townhouse crackers OR 1 pkg. Ritz crackers
1 T. poppy seeds
4 T. melted butter
Cooked Rice

Mix together the soup and sour cream.Add the chicken and place in a 9x13 inch pan (I cook two cups of rice and put it on the bottom of the pan then the chicken and soup mixture over that). Crush the crackers. In a separate bowl mix together the crackers, butter, and poppy seeds. Then put over chicken. Bake at 350 degrees for 35-40 minutes or until bubbly.Serve over cooked rice.

I love this recipe!! It is something that tastes just as good leftover.
