Quick lunch

I am usually so frustrated with my lunch options that I just eat junk food or go without. But today I was super hungry today. So we had canned chicken, tossed in a little bit of mayo with avocado and celery on whole wheat bread. It was so good! Then I smashed up the rest of the avocado and mixed it with salsa... (our favorite is Jack's from Costco) and had it with chips. Yum! It really hit the spot.

Chicken Lo Mein

Just saw this on facebook and I am totally going to be making it this week! Yum!


One Pot Wonder Chicken Lo Mein 

Ingredients: 
• 1/2 lb chicken breast, cut into small chunks
• 12oz whole wheat linguini or fettuccine, broken in half
• 4 medium carrots, peeled and cut in thin 3 inch long strips
• 1 medium red bell pepper, cut in thin 3 inch long strips
• 1 bunch green onions, white part sliced and green part cut in 3 inch long strips
• 4 cloves garlic, minced
• 1/4 C soy sauce
• 1 tsp garlic powder
• 1 tsp corn starch
• 1 tbsp sugar
• 1/2 tsp red pepper flakes
• 4 C chicken or vegetable broth
• 1/2 C water
• 2 tsp extra virgin olive oil

Directions:
Add the chicken, then the pasta, then the remaining ingredients to a large stockpot and cover. Bring to a boil. Stir and reduce to a simmer. Cook covered for about 15 minutes, stirring occasionally. Cook until most of the liquid is gone and the chicken is cooked through.




**************** After making this.... We did like it. But it needed more sauce or something. More flavor. Also, it cooked  just a little too long, but it was good. So easy that I will definitely be making it again and just trying some new things!

       Well, this past week I have been a major slacker with my meal planning and grocery shopping. Does anybody else dread grocery shopping? I HATE it. I am lucky if Hayes makes it 20 minutes before he starts throwing his tantrum so it always stresses me out. But, this next week and a half we will be staying at my sisters house to watch her four kids. So we will have a lots of mouths to feed and I will have to do some cooking. I haven't quite planned it out exactly yet, but I am thinking I will make a yummy cream of chicken soup, french dips, chicken roll ups, fajitas, and Mary's poppy seed chicken. Just off the top of my head. I will share recipes as soon as I get a second!


       How do you all do your grocery shopping and find the best deals? Coupons? Price matches? I need to be better at watching sales and saving us some money....

Hey everyone :-). I'm Paige's cousin Kimber and I'm so excited for this blog!! I hate coming up with meal plans and the worst question is "what's for dinner?!" I'm excited to find new recipes here and to share some of our favorites! I was going to steal all the recipes from the first week- bc they all sounded DELISH!!- but I thought that would defeat the whole purpose of this blog. I'll steal one a week until we get more recipes on here :-). Anyway- look forward to seeing more meal plans and delicious recipes.

Poppy Seed Chicken

Poppy Seed Chicken

Ingredients:
2 cans cream of chicken soup
1 C. sour cream
4-5 chicken breasts, cooked and diced
1 1/2 pkgs. Townhouse crackers OR 1 pkg. Ritz crackers
1 T. poppy seeds
4 T. melted butter
Cooked Rice

Mix together the soup and sour cream.Add the chicken and place in a 9x13 inch pan (I cook two cups of rice and put it on the bottom of the pan then the chicken and soup mixture over that). Crush the crackers. In a separate bowl mix together the crackers, butter, and poppy seeds. Then put over chicken. Bake at 350 degrees for 35-40 minutes or until bubbly.Serve over cooked rice.

I love this recipe!! It is something that tastes just as good leftover.

Quiche

Quiche is a very big part of the holidays with my family. It is very much a comfort food to me. I always enjoy it when my mom and sister make it, so I thought that I would give it a go. It turned out perfectly and their were no leftovers! (Score!)

-1 1/2 cups swiss cheese
-1 1/2 cups diced ham
-2 tsp. flour 
-3 eggs
-1 cup cream
-1/2 tsp. salt
-1/2 tsp. dried mustard
-one pie crust (I use frozen)

In your pie crust put your shredded cheese and coat it with the flour. Then mix in the ham. Next, blend your eggs with the cream, salt and dried mustard.

Cook at 350 for 1 hour. It cooks the most evenly this way. 

EASY!

Chicken Noodle Soup

I have always liked chicken noodle soup but it always seemed like a long process and too hard.  I found this recipe a few months ago and we love it.  I use a rotisserie chicken from Costco and shred it.  I also don't put as many noodles in as it asks for.  I use the Country Pasta Noodles Homemade Style egg pasta.  I use maybe a 1/4 of the package and break it up into smaller pieces. I have never done it in the crock pot.  On the stove it takes about 45 minutes.  I made this again tonight and it was very yummy!!

Chicken Noodle Soup

2 teaspoons butter
1 cup sliced celery
1 cup chopped carrots
1/2 cup chopped onion (I use a couple shakes of dried chopped onion)
1 teaspoon thyme
1 teaspoon poultry seasoning
4 (14 oz) cans of chicken broth
2 chicken bouillon cubes
2 cooked chicken breasts cut up
Half a package wide egg noodles (about 6 oz)

Saute celery, carrots, and onion in butter for two minutes (or until tender).  Add thyme, poultry seasoning, chicken broth, and bouillon.  Bring to a boil.  Add chicken and noodles. Cook on low for 20 minutes.  Serve immediately with warm homemade bread.

Crock pot Instructions: Throw almost everything (butter, celery, onion, thyme, poultry seasoning, chicken broth, bouillon, 2 raw chicken breasts, but NOT the noodles) in the crock pot & cook on low all day (4 hours on high).  Remove chicken, chop, put back in pot.  Add egg noodles, and let cook for 15- 20 minutes longer on low.  Do NOT let the noodles cook for too long... you will have mush for dinner instead of yummy delicious soup.  Serve with a loaf of Rhodes Bake & Serve bread that you set out to thaw when you started the soup!  There's no shame in doing that once in a while.

Here are even more shortcuts with the crock pot:  

- Use frozen chicken breasts.  Just throw them right in the pot.  Easy!  

- Chop a TON of celery and carrots the first time you make this soup.  Put a cup of carrots & a cup of celery in a quart size freezer Ziplock.  Freeze for later use.  Throw them in the crock pot frozen.  They cook up just like fresh.

Tex Mex Tacos

This is by far our favorite taco recipe. It is so so simple and yet full of flavor.

Marinate a chuck roast in a can of Coke

Layer half of a yellow onion and 3 cloves of garlic on the bottom of your crock pot.

Place roast in slow cooker with a half can of fresh Coke, a cup of salsa, fresh lime juice (one lime), Chili powder, cumin, and red pepper flakes, fresh peppers or jalapeno-- to liking. Add more of whatever, just make sure the the roast is not dry at all.

This recipe is best cooked on low for six hours. It literally falls apart when it is ready.

Serve with chopped romaine, avocado slices, white onion, pico de gallo, and sour cream.


I will freeze the leftovers that we have from this!

Homemade marinara meat sauce

Ingredients
  • 1 tablespoon of extra virgin olive oil
  • 2 cups of chopped onion
  • 2 tablespoons of minced garlic
  • 1 (6 ounce) can of tomato paste
  • 8 cups of peeled and chopped tomatoes, juices retained
  • 2 pounds of ground beef
  • 1 teaspoon of Italian seasoning
  • 1 teaspoon of dried basil
  • 2 large bay leaves
  • 1 teaspoon of kosher salt
  • 1/2 teaspoon of freshly cracked black pepper
  • 1-1/2 tablespoons of granulated sugar
  • 1 cup of beef stock or broth
  • 3 (8 ounce) cans of tomato sauce
  • 2 teaspoons of dried parsley
  • 1/2 teaspoon of Cajun seasoningor to taste, optional
Instructions

Heat olive oil in a large saucepan over medium heat; add onion and cook until softened. Add the garlic and cook another minute. Add the tomato paste and cook over medium high heat, stirring constantly, for 5 minutes. Add the chopped tomatoes, or if using canned, cut the tomatoes up in the can with kitchen shears, then add them with their juices and bring to a boil; reduce to medium, cover and simmer for 30 minutes, stirring occasionally. Puree with an immersion blender if desired, or can leave chunky.

Cook ground beef in a separate skillet, drain off fat and add to sauce along with the Italian seasoning, basil, bay leaves, salt, pepper and sugar. Stir in the beef stock and tomato sauce, bring to a boil, reduce and simmer over medium low, covered, for 2 hours or longer. Taste, stir in parsley and Cajun seasoning, if using, and adjust seasonings as needed.

Cook's Notes: While it will vary on the size of the tomatoes, you'll need about 5 to 6 large tomatoes or somewhere around 4 pounds total. Out of season, substitute 1 large (1 pound 12 ounce) can of whole, Italian style tomatoes and 1 large (1 pound 12 ounce) can of pureed or crushed tomatoes for the fresh. I like to use Cento brand San Marzano Italian style tomatoes. Omit sugar if using canned tomatoes. This recipe makes approximately 12 to 14 cups of meat sauce, enough for two meals. I often set aside about 6 cups to make lasagna or ziti. Okay to substitute dry bouillon or beef base (like Better than Bouillon) with water for the beef broth.

Variation: Substitute half Italian sausage, ground venison, or raw, bulk pork sausage (not breakfast sausage) for half the ground beef, or use a combination of other meats for a total of 2 pounds.

Slow Cooker:  Prepare as above, but transfer to the slow cooker. Cook on low for 6 to 8 hours.



I am going to make it in the slow cooker and then freeze what we don't use. We will see how it turns out!

Chicken Tortilla Soup

This recipe is one that I ate a lot growing up-- super easy!

Serves 2- no leftovers

4 cups chicken broth
1 can petite diced tomatoes
2 Tbs. chili powder
1 cup chicken
1 cup corn
1 can black beans


When serving add a squeeze of lime, some sour cream, diced up avocado, and crushed up chips.

So excited to get this thing started. I am so happy with this little idea that popped into my head this morning, because I really need some motivation. I need to do better with my meal plans... let's be honest... I am sick of my own recipes. They have been made over and over again and I need some fresh ideas. My mom laughs at me because we have only been married a year. So, I need to get in a better habit so I can stay on track with my planning. I would love to hear any type of recipes, anything goes! If you would like to contribute all you need to do it comment with your email address and I can add you as an author. Time to bring on the recipes! I will probably share my meal plan and then go ahead and share the recipes that we loved after I have made them all. You do what you want.Add pictures if you have them as well! But please, label your posts with you name, type of recipe- i.e. breakfast, lunch, dinner, dessert- and whatever else you can think of that could add more order to the blog.

Monday- Chicken tortilla soup
Tuesday- Ham dinner
Wednesday- Ham and cheese quiche
Thursday- Shredded beef tacos
Friday- Spaghetti
Saturday- Hobo dinner stew

For the ham dinner and quiche, I got a ham from Costco that has been in the freezer for a few weeks, so I will make a nice dinner out of it with funeral potatoes, salad, and rolls. Then we will be eating off of it and using the leftover for a few things in the next little while. The beef tacos (recipe to come-- AMAZING crockpot meal), homemade marinara sauce, and stew I will freeze the half that we don't eat.
